Canola oil can be used as cooking
and salad oil. In the case of using as a salad oil, it should be remained
transparent at refrigeration temperatures. Oil isolated directly from the seed
does not need ‘winterization’ or fractionation. However, winterization is
applied to provide clarity, particularly when dry conditions occur during the growing
season, and canola has a tendency to accumulate more long-chain fatty acids in triacylglycerols
and waxes.Therefore, in the sediment from industrial winterization, long-chain
saturated minor fatty acids and alcohols with 26 to 32 carbon atoms have been
found in waxes and triacylglycerols. Most of these compounds are extracted from
the seed coat and can initiate sediment formation in canola oil (40).

Jojoba wax is
obtained from the plant S. chinensis, a shrub belonging to the family
Simmondsiaceae. The plant is commonly called jojoba pignut, deer nut, goat nut,
wild hazel, etc. The plant is found in the semiarid regions of Mexico and in the
United States. It has very high economic value in the Sonoran desert (269).

Seeds from the
jojoba plant contain typically over 50 % by weight of liquid wax esters. These
seeds are the only potential source of commercial quantities of unsaturated
straight chain wax esters which is known as liquid wax. This unique oil differs
from common vegetable oils and animal fats in that it is composed mainly (97 %)
of linear long- chain esters, which are characteristic components of waxes and resembles
that of sperm whale oil (283). It contains
little or no glycerin and that most of its components fall in the chain-length
range of C36-C42, and is very resistant to oxidation  (284).

The jojoba oil
is characterized of being a monoester of high molecular weight and straight
chain fatty acids and fatty alcohols that has a double bond on each side of the
ester. The molecular structure of the oil can be represented by the following

in jojoba oil are monounsaturated, straight-chain representatives of the
chainlength range C16–C24 unlike other vegetable waxes. Among the acids the C18
(ca. 12.5% of the total acids), C20 (ca. 67% of the total), and C22 components
(ca. 14.5% of the total) predominate, and among the alcohols, the C20 (ca. 48%
of the unsaponifiable components) and C22 components (ca. 41% of the
unsaponifiable components). With this unusual composition, jojoba oil is very similar
to sperm whale oil (267).
